Aubergine Parmigiana

Aubergine parmigiana is a very difficult dish to cook.

Not so much in terms of the recipe, as for the expectations of those around the table: it is a dish full of memories of family lunches, home cooking and traditional recipes.

It is with this in mind that I describe my recipe for aubergine parmigiana. With just one variation on tradition: aubergine parmigiana in individual portions, to make every dish its own creation.
